You know what an easy solution is for dinner? Grilled sausages.
There are so many flavorful sausages in the grocery store… apple, bacon, cheddar, spicy… you name it. My husband and I have been known to make plenty of quick dinners by simply grilling up some sausages and cooking up some fresh or frozen veggies on the side. It is healthy and quick dinner option for those nights that we are too tired/lazy to make an elaborate meal.
We’ve tested out a number of sausage brands, and of course we have a few favorites. But there is always some newbie sausage brand showing up on the shelf and a never ending supply of new flavors coming out – giving us a nice variety! One of the latest new brands is Guy Fieri Sausages.
Guy Fieri Sausages are at Walmart in the refrigerated aisles with the hot dogs, sausages and breakfast meats. Guy Fieri Sausages has a number of flavors including Tequila Lime, Fajita, Nacho Style, and Italian Style. The sausages come in a four pack and are made from either chicken and pork. These thick and hearty sausages are great for a quick cuisine! We tried out two varieties so far and they both are full of flavor!
We enjoyed the first sample of sausages in the most simpliest way. We grilled them with saukraut and mustard. With our second sausage package we wanted to create a quick meal.
I am currently on a strict low FODMAPS diet, and was excited I could use these sausages to make a meal that followed the low FODMAPS restrictions! Here is my easy skillet meal recipe that is basically made up of sausages, zucchini, potatoes, and peppers.
Sausage, Potato, Zucchini, Peppers Skillet Meal
Ingredients
Seasonings
- 1-2 tsp basil
- 1-2 tsp oregano
- 1-2 tsp parsley
- Pinch red pepper flakes
- salt and pepper to taste
- 1-4 Eggs
- 1 package of Guy Fieri Sausage any flavor, sliced
- 1 red pepper diced
- 2 small potatoes thinly sliced
- 1 zucchini thinly sliced
Instructions
- Put potato slices in a microwave safe bowl with a lid (or use a plate, saran wrap) and cook in the microwave for 1 minute). This softens the potatoes.
- While potatoes are softening, combine all seasonings together in a small bowl and set aside.
- Cook the sausage slices in a large skillet with oil over medium heat – once cooked, set aside on a plate.
- Add more oil to pan and cook potato slices until soft and slightly brown. Add peppers and continue to cook for about 5 minutes.
- Add zucchini and seasoning mix to the pan with the potatoes. Continue to rotate until all is fully cooked, making sure zucchini doesn't get too soggy.
- Finally, add the sausage back in the hot skillet and continue to cook about 2 minutes.
- Push all the ingredients to the side of the pan and cook a few eggs to your desired cooking method.
- Add the eggs to your plate and top with the potato, sausage, zucchini mixture!
- Enjoy while it's hot!
We cooked up this easy meal for breakfast this past weekend. We are big fans of hearty weekend breakfasts – and this creation differed from our usual bacon and eggs skillet. This was a bit more colorful and flavorful!
This recipe is simple. Gather your supplies. Cut up all of you ingredients.
When you cook up the potatoes, make sure they stay moist. Don’t overcook them in the microwave. Just a minute should tender them up a bit!
The seasonings are really flexible in this recipe. They really depend on which fully-cooked sausage you choose. If you choose a spicy one, add a few more spicy seasonings like cayenne, paprika, and red peppers. I like the Italian seasonings (above) for the Italian sausages and the mozzarella sausages. If you are doing a sweeter sausage – maybe you don’t need seasonings at all.
Another guide is to look on the packaging and just add more of the same ingreidents that they used! You can’t go wrong with that!
Make sure the potatoes get fully cooked. Nothing weirder than a uncooked potato in the mix of soft and steamy vegetables! Don’t worry about using too much oil – these veggies will soak it up! You can always drain it off at the end.
Cook your eggs the way you like them and top them off with this delicious skillet meal!

I hope you see that sausage is great for breakfasts as well as barbecues! I know the first thing I think of is cooking sausages on the grill – but there is so much more potential! When it is too cold to be outside on the grill, I like to cut up sausage and cook them in various dishes – like gluten free casseroles, gluten free pasta dishes, soups, and stir fry skillet dishes.
