Put potato slices in a microwave safe bowl with a lid (or use a plate, saran wrap) and cook in the microwave for 1 minute). This softens the potatoes.
While potatoes are softening, combine all seasonings together in a small bowl and set aside.
Cook the sausage slices in a large skillet with oil over medium heat – once cooked, set aside on a plate.
Add more oil to pan and cook potato slices until soft and slightly brown. Add peppers and continue to cook for about 5 minutes.
Add zucchini and seasoning mix to the pan with the potatoes. Continue to rotate until all is fully cooked, making sure zucchini doesn't get too soggy.
Finally, add the sausage back in the hot skillet and continue to cook about 2 minutes.
Push all the ingredients to the side of the pan and cook a few eggs to your desired cooking method.
Add the eggs to your plate and top with the potato, sausage, zucchini mixture!
