We love meat in this house. We rarely have a meal without it. This is mainly because we farm-share and my husband is a hunter. Recently though, I have been incorporating more vegetables into my meals. It has been pretty easy, especially when you shred vegetables like carrots, zucchini and squash and add them to your everyday meals. Vegetables can be added to soups, pastas, chilis and more, without changing it too much!
So when we decided to make Sloppy Joes the other night, I decided to give them a healthy twist with some grated zucchini squash. The squash added a hearty feel to the Sloppy Joes! It was so delicious – anyone (even the non-vegetable-lover) would appreciate this spin on the traditional favorite!
This recipe just takes 3 ingredients. Can it be any easier?
How to Make Grated Zucchini Squash Sloppy Joes:
1. Cook 1 lb of lean ground beef, ground turkey, ground buffalo, or your ground meat of choice in a skillet, drain excess fat.
2. Choose your favorite Hunt's Manwich Sauce (Do you like Thick and Chunky like me? Or maybe Original?) and stir it in with the cooked meat.
3. Meanwhile, while it is heating, grate up 2 zucchini squashes (2 serves 4 people). And add it to your meaty mixture.
4. Serve warm. Enjoy!
*If you like your Sloppy Joes more traditional, follow the same directions above and then plop it between a bun and enjoy. It is so good, moms, dads and kids will equally love it (and they may never know that it's healthier!) Honestly, when mixed together, you can't tell this even has vegetables in it! This recipe has “kid-stopping” power and doesn't take a whole lot of energy on week nights!
