Going gluten free is not a choice I would have made for myself. My food world became a lot lonelier without delicious pasta, fresh table rolls, and all those tasty baked goods! (Oh, and did I mention milk upset my stomach too… but more on my new a2® milk discovery later!)
Going gluten free has literally changed my entire health situation, my body thanks me. I am happy to avoid these gluten-filled items because it means my tummy is finally happy!
I have been 100% gluten free for almost a year and I have been pretty slow to learn how to bake gluten free. It is a bit more complicated and requires all sorts of ingredients. So when I do cook gluten free, I try to find the most simple gluten free recipes ever! I am one of those lazy gluten free bakers.
This gluten free cookie recipe is probably as easy as they come. It takes only about 20 minutes and only 6 ingredients! And these ingredients are usually in my pantry anyway! It is the gluten free recipe for cookies that I will turn to again and again. I just am so happy with the taste and the simple steps! So if you are gluten free and like dark chocolate and peanut butter? This recipe is for YOU!
Here’s how to make the gluten free blossom cookies:
First grab your ingredients:
Mix together peanut butter, sugar, brown sugar, an egg and vanilla in a bowl.
While you are mixing, go ahead and pre-heat your oven to 350 degrees F and put some parchment paper on a cookie sheet.
The dough should look like something like this. Not too watery but not flaky either. If dough is too sticky, refrigerate 1/2 hour until it becomes easier to work with. (I also drain the top oil of the natural peanut butter so it is less oily/watery).
Roll pieces of the dough into 1-2″ balls and roll in granulated sugar. Place on parchment-lined cookie sheet about 1-2″ apart. Should have about 20-25 cookie balls.
Bake in the oven at 350 degrees F for about 8-10 minutes. Watch the last minute to make sure they are barely browned – careful to not over bake. They may or may not flatten slightly on their own.
Remove from oven and quickly place a single dark chocolate piece into the center of each of the cookie dough balls. Press slightly.
Allow to fully cool on baking sheet.

Dark Chocolate Peanut Butter Blossom Cookies {GF}
Ingredients
- 1 cup chunky peanut butter natural
- 1/2 cup sugar
- 1/2 cup brown sugar packed
- 1 egg
- 1/2 teaspoon vanilla
- Handful of dark chocolate kisses
Instructions
- Preheat the oven to 350 degrees F.
- Pour peanut butter, sugars, egg, and vanilla into a bowl and mix together.
- Roll cookie dough into balls about 1-2" and place on parchment paper-lined cookie sheet.
- Bake for 8-10 minutes, until slightly browned, but being careful not to over-bake.
- Immediately press a single dark chocolate piece into each cookie.
- Cool on baking sheet until solid.
- Enjoy!
