I was sent a sample box and a gift card for this cereal recipe post.
There are some amazing recipes made from cereal. Cookies, treats, clusters… I often find myself making recipes using cereals for parties and holidays… especially around Christmas! The recipes using cereal are endless!
So what about summer recipes using cereal? I don’t usually think about those as much as Christmas time, but let’s give it a GO!
Honey Bunches of Oats has lots of tasty recipes using it’s delicious cereal. Crab Cakes with Sriracha-Lime Mayo, Sweet and Savory Mango Spears, Fried Ice Cream with Cinnamon-Chocolate Sauce and Crunchy Sweet Potato Fries with Harissa Ailoi, don’t those sound delicious?
I decided to test out their yum-sounding recipe for fried ice cream! I had all the ingredients on hand and this fried ice cream recipe sounded pretty easy to do!
“Fried” Ice Cream with Cinnamon-Chocolate Sauce
Prep Time: 30 minutes
Total Time: 1 hour 30 minutes
Serves 4, 1 ice cream ball each
Ingredients
“Fried” Ice cream:
- 1 cup Honey Bunches of Oats Almond cereal
- 1/2 cup shredded coconut
- 1/4 teaspoon chili powder
- 1 tablespoon coconut oil
- 2 cups ice cream (flavor of choice)
Cinnamon-Chocolate Sauce:
- 1/2 cup semi-sweet chocolate chips
- 3 tablespoons heavy cream
- 1/2 teaspoon cinnamon
Directions
– Place cereal in a medium bowl and lightly crush with your hands or the back of a wooden spoon. Add coconut and chili powder and combine.
– In a large skillet, heat coconut oil. Add cereal and coconut mixture and fry until it is golden brown and toasted, about 5 minutes. Remove from heat and cool completely
– Scoop approximately a 1/2 cup, using a ice cream scoop and quickly form balls with your hands. Place on a small tray and immediately return to the freezer for at least 30 minutes or until the balls are firm.
– Remove ice cream balls from freezer and quickly roll each ball in the cereal and coconut mixture. Return to freezer for at least another 30 minutes or until the balls are firm again.
– When ready to serve, combine the chocolate chips, cream and cinnamon in a microwave safe bowl and microwave for 30 seconds. If the chips are not completely melted, stir and microwave for an additional 30 seconds.
– Serve each fried ice cream ball with a drizzle of cinnamon-chocolate.
Recipe Recap: This sure was an easy fried ice cream recipe! It didn’t take long at all, with just a few short steps! The longest part was waiting on the ice cream to freeze! When they were all done I stored them in the bowl in the freezer for a surprise dessert for the hubby. He thought they were so creative! He loved the crunch and the sweet smooth inside treat.
Making fried ice cream was a first for me, and this recipe is a winner!
