Let’s Make Pad Thai!
My husband and I were lucky enough to travel to Thailand a few weeks ago. We loved the people, the culture and the FOOD! We’ve never tried to make Thai food on our own, but now was the time, because we craved it soon after we got home! We headed to the Asian market to get some of the new/interesting ingredients. It was quite the experience!!
The recipe is for chicken pad thai. If you choose, you can add dried or fresh shrimp too! The funny thing about this recipe is you make one plate at a time, but the plate is huge!! Enjoy!
ingredients
- 1/2 cup Tamarind pulp
- 1/2 cup Fish Sauce
- 1/3 cup sugar
- 2 teaspoon Sweet Chilli Sauce
- 1 bag dried noodle pad thai noodles
- 1 Chicken breasts
- 1 Tofu cube firm
- 1 Egg
- 1 tablespoon ground peanuts
- 1 Green onion
- 1 cup Bean Sprouts
- 2 Garlic cloves chopped
- 3 tablespoons vegetable oil
Preparation
Soak noodle in warm water until it’s softened.
Make sure the wok is well seasoned.
Preparing the Sauce:
1. Melt Tamarind, Fish Sauce and Sugar together in a small pot over a low flame.
2. Add sweet chilli sauce.
3. Turn off the heat and let the sauce rest.
Putting it all together:
1. Heat a large wok over high heat until very hot.
2. Add 3 tablespoons oil.
3. Add the chicken, cook, stirring vigorously, until it’s half way done, about 1-2 minutes, then add the tofu, a scoop or two of the sauce to flavor the chicken, and a pinch of garlic. Cook for another minute until the tofu is crisp and slightly brown at the edges.
4. Add the noodles, (about 2 loosely packed cups for one portion) and then add 2 scoops of warm sauce. Stir rigorously, keep everything moving in the wok, and cook the noodles until soft. Remember to break up the noodles and don’t let them lump together. If the sauce evaporates too quickly and your noodles aren’t quite ready, sprinkle a bit of water and keep stirring. Add a bit of oil if the noodles are still sticking together.
5. Push the noodles up to one side of the wok and crack an egg into the middle. Let it set for 10-15 seconds and toss everything else (green onion, ground peanuts, and beansprouts). Keep things moving. Add more sauce if needed. Dish up and enjoy!!
7. Repeat for each plate.
