We’re picky about our meats. We VERY rarely pick up meat from the grocery store, we’re just not so sure where that meat came from, how the animals were treated, or what was done to the meat during processing/packaging. We avoid the grocery store meat aisle in the past because (1) my husband hunts and (2) we’ve purchased a butchered cow from a ranch in Southern Colorado for a meat share with friends. We are snobby about our meat and we just don’t buy that much meat in the grocery store!
As it turns out, cattle aren’t made entirely of ribeyes, porterhouses, and prime rib so when you purchase your 1/2 a cow, you end up getting all the rest of the meats with it! Well guess what gets eaten up first? Those tasty ribeyes, porterhouses, and the prime rib are always the rarest and the first to go, Which then, we are left with the rest. Soon we find ourselves making a lot of chilis, casseroles, and tacos!
So when we wanted some fine cuts of meat, without buying another meat share and getting all the extras, we went with Certified Steak and Seafood.

Certified Angus Beef® brand Prime is so exclusive that it must pass nine more specifications than USDA Prime! Of course, beef that is considered in the top 1% quality comes at a price! While Certified Steaks and Seafood aren’t particularly cheap but they are super competitive with the other mail order super-high-quality beef suppliers. The 4 bone prime rib that we received from Certified Steak and Seafood immediately made my mouth water. The perfect marbling and obvious tenderness (even noticeable in the packaging) was something that I just couldn’t wait to sink my teeth into. Of course, we couldn’t just cook it up for any old Tuesday night dinner! No way! We had to have friends over and give the whole steakhouse experience. If we were going to cook this delicious piece of meat we had to do it in style and reverence that a cut of meat this choice (nay, prime) deserved. We gave our friends the full steak house experience with a (near) perfectly cooked prime rib with a jus! Several hours in the oven at 200, a quick sear at 450, and we had a deliciously perfect medium-rare prime rib on our hands all thanks to Certified Steak and Seafood!
