The greatest breakfast trend is overnight oats. Unfortunately, oats and I haven’t always been buddies. My short history with oats… I used to be scared of them. I use to think they gave me tummy aches and gas. But now that I use gluten free oats… no more worry! Oats are now my steady amigo! They are a great source of fiber and are excellent at filling me up.
Making overnight oats encourages me to eat breakfast, no matter how crazy my morning may be. They are so simple and quick to whip up. Overnight oats are great for on-the-go or for anyone with only few minutes to spare in the morning!
There are a million recipes for overnight oats, and the recipes are so customizable!
At first, I was very careful to follow previous tested recipes. Now that I am more comfortable, I get more creative in adding new ingredients to overnight oats. Some of my favorite ingredients in overnight oats are: strawberries, blueberries, raspberries, banana, chia seeds, dairy-free yogurt, dairy-free milk, nut butter, flax seed meal, cinnamon, hemp seeds, coconut shreds, goji berries and more!
This recipe for Blueberry Overnight Oats is a winner. It is sweet, hearty and delicious. It is almost as satisfying as dessert. Yes, you read that right, it is THAT good! But, if you want a lower-sugar version, just take out the brown sugar, and enjoy!
Blueberry Overnight Oats Recipe
Ingredients:
½ cup gluten free steel cut or rolled oats (no need to pre-cook!)
½ tablespoon NOWfoods organic toasted hemp seeds
1 tablespoon chia seeds
1 tablespoon flax seed
½ – 1 tablespoon brown sugar
¼ cup fresh or frozen blueberries
½ ripe banana (mashed)
½ – 1 cup Almond Breeze Almond Milk, (or other lactose-free, nut, regular milk of choice)
Directions:
Combine all the ingredients in a jar with a lid. (I wash and reuse small glass jars from olives!)
Twist on the lid tightly and shake to combine the ingredients.
Store in the refrigerator for at least 6 hours, preferably overnight. (On occasion, I have stored mine for 2 days, and they are just fine!)
Assembly:
Once the overnight oats have been brewing for a sufficient amount of time, take them out and shake them well. Mix anything that sticks to the sides with a spoon. You can eat the Overnight Oats cold or warm the oats up in the microwave! (I prefer cold… it is sooo good, trust me!)
If you are inclined add your favorite toppings (blueberries and nuts go well on this one). Enjoy!
Tip: While you wait, shake up the ingredients anytime you open the refrigerator!
