Pasta hates my guts. No seriously it does, my doctor told me my gut is seriously inflamed due to carbs and sugar! So, now I am on a strict diet of supplements, vegetables and meat until we can get my body back to normal… or maybe forever?
So, I am about a week into eating this new way (kind of like a candida diet, sort of like paleo diet, very low carb… but even more restricted). ANYWAY – I am having MAJOR food cravings of bread and sugar. Wow, my body sure knows something is up! So how do I solve my pasta cravings on my strict diet? By faking it!

One tool to make vegetable pasta strands is the Veggetti and I am excited to share my experience with you!

I made a delicious Vegetable Pasta – and here is the recipe:
Zucchini Noodles with Creamy Avocado, Basil, Cilantro Sauce & Chicken Sausage
Ingredients
- 5 medium-large zucchinis washed
- 1 tbsp coconut oil
- Optional Meat of choice - I used Organic Chicken Sausage
CREAMY SAUCE
- 2 large or 3 small avocados, pit removed
- 2-3 springs fresh basil (about 10 basil leaves)
- 2-3 springs fresh cilantro about 10 cilantro leaves
- 2 tsp. sea salt
- 2 tsp. ground pepper
- 3 garlic cloves chopped
- 2 Tbsp. coconut oil
- 1 small lemon squeezed
Instructions
- Use the Veggetti to spiralize all your zucchinis into a collander. Add some sea salt to the zucchini and toss to coat. Allow to drain (in plastic bag or sink) for about 20 minutes. This will get rid of some excess water from the zucchini. After, pat down your zucchini with some paper towels to get rid of even more moisture.
- Put all of the "creamy sauce" ingredients in a food processor and blend until your desired consistency.
- In a frying pan, add 1 tbsp. coconut oil and melt on medium high heat. Add the zucchini and cook for about 3-5 minutes. Once it is warmed up a little, add the chopped meat of choice and sauce. Toss the ingredients in the frying pan until all the zucchini is coated. Cook for another 3-5 minutes
- Enjoy immediately!
