Who doesn’t love pasta? We sure do in our house! I have to admit though, I’m often a “jarred sauce” kind of gal due to lack of time. This homemade sauce is easy, and you’ll be glad you carved out a few extra minutes.
Ingredients:
1 Tbs. Canola Oil
1 Onion, chopped
2 Cloves of garlic, minced
1 lb. ground turkey breast
1/4 tsp. salt
1 14.5 oz can diced tomatoes, undrained ( I used two because we love tomatoes!)
1 large carrot, shredded
3 Tbs. tomato paste
1 Tbs. dried Italian seasoning
1/4 Cup grated Parmesan cheese
1/2 lb. fettuccini, broken in half ( I used organic, whole wheat)
Make it:
1. Heat oil in a large saucepan over medium heat; sauté onion for 4 minutes. Toss in garlic; sauté for 1 minute. Add turkey and salt; continue to cook for 4 minutes more or until turkey is cooked through, stirring to break up the turkey. Mix in undrained tomatoes, carrot, tomato paste, and Italian seasoning. Bring to a boil.
2. Partially cover the saucepan, reduce heat and simmer for 20 minutes, stirring occasionally. Stir in Parmesan cheese. Cover completely and cook for 20 minutes more, stirring occasionally.
3. During the last 20 minutes of cooking the sauce, boil the fettuccini according to the package directions. drain. Spoon the sauce over the noodles.
Serve with a green salad and some garlic bread for a delicious meal
