Many of you know that I am pretty open about my health issues. I have written a few posts mentioning my digestive struggles and my experiences with cutting out foods that are bothersome. I have told you a little about my FODMAPS diet plan and how I did the elimination diet to try to get to the bottom of my gut issues!
I have discovered a few things that make me feel better, but I am still constantly working at it. It is a never-ending battle when you struggle with IBS (irritable bowel syndrome). And for me, specifically IBS-C.
For those that suffer with gut health, there’s nothing more crucial than being aware of what you eat. I know it is silly, but you are what you eat. When your body doesn’t approve of some foods, cutting out those foods makes a HUGE difference, even if it is a small difference, it is a step for IBS sufferers. That, and of course you know I swear by probiotics and digestive enzymes.
Basically, thanks to my Gi challenges, I am constantly looking for recipes that work with my sensitive gut. In fact I have an entire Pinterest board full of simple gut-happy recipes! So when I found out that VSL#3 (www.vsl3.com), a high potency probiotic medical food, had a whole collection of IBS-Friendly Recipes on their website, I was excited to find a number of tasty recipes all in one place!
I decided to try one of their recipes that was perfect for my on-the-go lifestyle. I only changed one thing about it.Instead of sour cream, I doubled the mayonnaise, because I try to limit dairy when I can. It turned out delicious. Here it is:
NEAR EAST CHICKEN SALAD (Created by Patsy Catsos, RD for VSL#3®)
A main dish salad with the exotic flavors of the East, this is an outstanding light meal or buffet dish. If you can’t eat sour cream, double up on the mayo.
Ingredients
½ cup mayonnaise
½ cup sour cream
¼ cup marmalade
3 tablespoons lemon juice, freshly squeezed
1 ½ teaspoons Madras curry powder
½ teaspoon cumin
½ teaspoon coriander
¼ teaspoon black pepper, freshly ground
½ cup red bell pepper, chopped
2 ½ cups brown Basmati rice, freshly cooked
2 cups seedless grapes, halved
2 cups cooked chicken or turkey, cubed
Directions
Combine mayonnaise, sour cream, marmalade, lemon juice, and spices in a large bowl. Add remaining ingredients and stir gently to evenly distribute the dressing.
Serve on spring greens and sprinkle with slivered almonds, if desired.
Servings: 6
