Spicy Stuffed Pepper Soup

This is a delicious base recipe that I added spice and seasoning to! So good and filling. I could eat it everyday!

Ingredients

  • 1 lb ground beef
  • 2 tbsp olive oil
  • 1 yellow onion diced
  • 1 red bell pepper diced
  • 1 green bell pepper diced
  • 2 cloves garlic minced
  • 2 cups tomatoes diced
  • 1 15 oz can tomato sauce
  • 1 carton of broth beef, chicken or vegetable
  • 2 tsp fresh parsley
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 1/4 tsp of crushed red pepper
  • 1 tbsp of Jalapeño Tabasco
  • 1 cup uncooked white or brown rice
  • salt and pepper to taste

Instructions

  • In a large pot heat 1 tbsp olive oil over medium heat. Once pot is warm, add beef. Cook and season with salt and pepper. Once fully browned, drain and push to side.
  • Next, pour remaining 1 Tbsp olive oil on the empty side of the pot. Add onions, red bell pepper, green bell pepper and garlic. Sauté about 5 minutes or until onions and peppers are tender.
  • Pour in diced tomatoes, tomato sauce, broth, jalapeno sauce and seasonings. (Also add rice and 2 cups of water – if you choose to cook in same pot). Bring to a boil, then reduce heat to low, cover and simmer, stirring occasionally, 30 minutes.
