I love to make corn salsa throughout the year! It is a great dish for parties and for snacking! This time I made my famous corn and black bean salsa with a new twist! I decided to roast the corn on the stove (because it is winter and corn on the cob isn’t in season. PLUS I don’t want grill in the snow) and secondly, I added a new ingredient – tofu!
Sounds kind of weird, right? But it is just like adding a protein – like chicken!
Tofu is a delicious addition for added protein and it is low in calories. Nasoya recently launched a brand new Chipotle TofuBaked, and I thought this flavorful and pre-cooked tofu would be an easy and tasty addition to this delicious roasted corn salsa!

The ingredients are pretty simple:
Roasted Corn Salsa
- 1 tablespoon olive oil
- 1 (15 ounce) can sweet corn kernels (or frozen)
- 1 package of Nasoya Chipotle TofuBaked, cubed
- 2 tablespoons chopped green onion (or red onion)
- 1 can of diced tomatoes (or tomatoes with chilies, fire roasted – even better!)
- 1 avocado, diced
- 1 (15 ounce) can black beans, rinsed and drained
- 1⁄4 cup fresh lime juice (approx. 2 limes)
- 1 teaspoon ground cumin
- 1 teaspoon ground chili powder
- salt and pepper to taste
The directions are even simpler!
Prepare your ingredients. Chop the vegetables. Wash the black beans and cube the tofu.
Next, you will want to roast your corn with the seasonings. You’ll know the corn is done when it has that perfect tint of roasted color. Just like this corn does!
Lastly, combine your ingredients adding the lime juice and the avocado last!
That’s it! It really is an easy salsa. The hardest part is roasting the corn!
You will be surprised by how flavorful this corn and black bean salsa is! The sweet roasted corn, tangy lime juice and the flavorful chipotle… it is oh-so-good!
