Not too long ago, I made my first recipe using the Veggetti vegetable spiral tool. I made a Low Carb Paleo Pasta with Sausage and Creamy Avocado Sauce (above). Since making the Zucchini Pasta recipes, I have been testing the Veggetti Spiral Cutter on all sorts of vegetables, making a number of different dishes.
Considering I was having so much fun with my new kitchen tool, I decided to share the love with some of my friends. I passed out the Veggetti to a few of my friends and invited them over for a “Veggetti® Dinner Party”. I said the only requirement was to bring a dish that used the Veggetti spiral tool. Let the creativity begin!
After a week of planning, I came up with a few recipes that my husband and I would add to the potluck. I decided to make a Cheese, Pepper, Bacon Zucchini Noodle dish as the main dish, Yummy Mummies by NomNomPaleo as an appetizer and then Cinnamon Sugar Apple Noodles from Sweet C Designs for desert. My friends were making side dishes, so we would have everything covered!
The Zuchini Pasta was an absolute hit! It was flavorful and satisfying. We all agreed that we would be making this again with our new Veggetti vegetable noodle spiral tools. Here is the recipe for how to make the Zucchini Noodle Pasta “Cacio e Pepe” with Cheese, Pepper and Bacon.
Zucchini Pasta (Cheese, Pepper, Bacon)
Ingredients
- 5 strips bacon
- 1 garlic clove
- 1/2 tbsp. red pepper flakes
- 3 medium zucchinis
- 1 cup grated parmigiano romano cheese (1/2 for topping)
- pinch salt
- freshly cracked black pepper
Instructions
- First make your zoodles. Take the Veggetti spiral tool and make your vegetable noodles from the 3 zucchinis. Place the zoodles in a bowl and add a pinch of salt to the spiral noodles, mix well. Allow to sit for a few minutes and then pat dry with a paper towel.
- In a large skillet, you want to cook your bacon strips over medium heat until done. Once they are cooked, place on a plate with a paper towel lining the plate (so it picks up excess grease). Once the bacon is cooled, break it into crumbled pieces.
- Keep 2 tbsp. of the bacon grease, and remove the rest. Use the bacon grease to heat up the garlic, red pepper flakes for 30 seconds. Then add the zoodles and the crumbled bacon to the heated skillet. Toss for 5 minutes.
- Finally, add 1/2 cup of grated cheese and combine thoroughly. Cook until the cheese is well blended.
- Serve the vegetable pasta. Divide the mixture into bowls and top each bowl with a freshly cracked pepper and the remaining cheese. Serve warm.
The “Veggetti® veggie pasta” party was a blast. We has so much fun making spiral noodles and laughing together after a long work week. We bounced ideas off of each other about possible vegetable dishes we could create with the Veggetti (Hey, maybe for a Round 2: Veggetti Party)! Overall, we made 6 different food items using the Veggetti!
My friends thought the Veggetti was great for zucchini, squash, large potatoes and soft vegetables. We struggled when trying to use too-small of potatoes. We decided the trick for using the Veggetti was that the vegetable needed to be long, so it was easier to hold on to. Soft vegetables were easier than hard vegetables, and zucchini is probably the best!
