Looking for an easy and delicious recipe to serve your holiday guests? Spicy Stuffed Pepper Soup is one of my favorite holiday party recipes. I haven’t met anyone that doesn’t like it – a guaranteed winner. Best part? It only requires one pot and a serving spoon!
Which means, less mess and more time for entertaining guests!
Stuffed Peppers have become a staple in our home. I make them a few times a month. I have made them with sausage, beef, deer meat and even gone vegetarian using quinoa. I love the endless filling options that you can stuff in your sweet peppers.
This tasty meal never gets old.
However, it can be a little messy. That is why I love Stuffed Pepper Soup – essentially the same ingredients, but more liquid-y. It makes a ton and is great for when we have guests over.
I originally adapted this delicious party food from All Recipes and thought I would put my own twist on it (since I am a master stuffed pepper maker). I always like more seasoning and spice than you get with your typical recipe, so I improved on this basic recipe with my own additions. *delicious dance*
So to make your Stuffed Pepper Soup. First gather your ingredients.
In a large pot, cook up your ground beef in 1 tbsp olive oil. Stir and add some salt and pepper to season. While the meat is cooking dice up the vegetables and garlic.
Drain the beef (or just use really lean beef like we do and no draining needed!)
Push the ground beef to one side and pour in 1 tbsp olive oil. Add the peppers, onion and garlic to the other side of the meat. Sauté for about 5 minutes until onions are yellowed and peppers are tender. While sautéing, continue to rotate the meat so it doesn’t burn.
Mix the meat and vegetables together and continue to sauté. It’s becoming pretty!
Pour in diced tomatoes, tomato sauce, broth and seasonings. Now it looks like a mess!
While the mixture is coming to a boil, prepare rice as directed. Or if you want to only use one pot… prepare the rice in the pot! (I use 1 cup rice and 2 cups water) Keep an eye on the mixture, rice tends to soak up liquids! If needed, add more broth!
Once the mixture comes to a light boil, reduce heat to low, cover and simmer. Continue to stir occasionally for about 30 minutes (or however long until rice is tender).
So easy right?
With this easy recipe, there is little mess to clean up. I used just one pot, a stirring spoon and a ladle! It is a perfect meal that won’t destroy your kitchen when you are having guests over. It is hearty, filling and even holiday-looking thanks to the tomatoes, red and green peppers!
Serve it warm with some cheddar cheese or bread rolls!

Spicy Stuffed Pepper Soup
Ingredients
- 1 lb ground beef
- 2 tbsp olive oil
- 1 yellow onion diced
- 1 red bell pepper diced
- 1 green bell pepper diced
- 2 cloves garlic minced
- 2 cups tomatoes diced
- 1 15 oz can tomato sauce
- 1 carton of broth beef, chicken or vegetable
- 2 tsp fresh parsley
- 1 tsp dried basil
- 1 tsp dried oregano
- 1/4 tsp of crushed red pepper
- 1 tbsp of Jalapeño Tabasco
- 1 cup uncooked white or brown rice
- salt and pepper to taste
Instructions
- In a large pot heat 1 tbsp olive oil over medium heat. Once pot is warm, add beef. Cook and season with salt and pepper. Once fully browned, drain and push to side.
- Next, pour remaining 1 Tbsp olive oil on the empty side of the pot. Add onions, red bell pepper, green bell pepper and garlic. Sauté about 5 minutes or until onions and peppers are tender.
- Pour in diced tomatoes, tomato sauce, broth, jalapeno sauce and seasonings. (Also add rice and 2 cups of water – if you choose to cook in same pot). Bring to a boil, then reduce heat to low, cover and simmer, stirring occasionally, 30 minutes.
Notes
Options: Depending on your rice, cook either as directed on package or right in the pot! I use plain white rice and I have had success with it either way. For the blog post photos I opted to cook separately to show off the rice!
This soup is great for leftovers! Honestly, I think I like it even more the next day! It will thicken up over time, due to the rice. It becomes like a stew. If you want to keep that soup consistency for leftovers, make sure to have some broth on hand!
