It is more important to me to spend time with my family than hours in the kitchen ignoring them. We’re all happier that way. That is why I like to bookmark and pin recipes that are not only delicious and healthy, but also simple and quick… so I ultimately have more time with them.
I don’t get down on myself for not spending hours fixing dishes. Dishes that will be eaten in a flash, and quite frankly, just as appreciated as a meal made in 20 minutes! I have found that Ro*Tel® and VELVEETA® make a great combination for quick and delicious meals! Like the Beef Enchilada Bake!
RECIPE: Beef Enchilada Bake
Prep time: 20 minutes
Total Time: 40 minutes
Makes: 6 servings, 3/4 cup each
What You Need:
1 lb. lean ground beef
1 can (10-3/4 oz.) condensed cream of chicken soup
1-1/4 cups (8 oz.) cubed VELVEETA®(1/2-inch cubes), divided
6 corn tortillas (6 inch), cut in half
1 can (10 oz.) Ro*Tel® Diced Tomatoes & Green Chilies, undrained
Make It:
HEAT oven to 350°F.
BROWN meat in large skillet; drain. Stir in soup and 1 cup VELVEETA®.
SPOON 1/3 of the meat mixture into 8-inch square baking dish; cover with 6 tortilla halves and 1/4 cup Ro*Tel®. Repeat layers. Top with remaining meat mixture, Ro*Tel® and VELVEETA®.
BAKE 25 minutes or until heated through.

I found the Beef Enchilada Bake to be a super easy recipe. Lots of varieties to this simple dish! You can make it more complex by adding shredded lettuce, fresh onion, olives and sour cream! Depending on your spicy factor, add the hot or medium can of Ro*Tel® or add peppers and jalepenos too! This recipe is delicious! Enjoy!
