Alaska Muffins

I love having baked goods on hand to go with my morning coffee. This is also a great recipe for brunch, and the best part? The batter stays fresh for up to 6 weeks in the fridge so you can make fresh, warm muffins as often as you’d like! This is the easiest recipe for Bran Muffins ever, and they are absolutely delish! I got this recipe from my mom who says it’s been in our family for many years.

   Alaska Muffins

15 oz box of Raisin Bran Cereal

1 Cup Oil

3 Cups Sugar

4 Eggs

1 Quart buttermilk

5 Cups Flour

 5 tsp. Baking Soda

  2 tsp. Salt

 4 tsp. Cinnamon

  1 tsp. Vanilla

Mix together all ingredients, stirring well (You will need a large bowl because this makes a lot!!). Do not remix. Let mixture set in the refrigerator one day before using. Bake at 400 for 15-20 minutes.

    Have you ever tried using whole wheat flour or applesauce in place of the oil? I’m wondering if you could subsitute with those instead. Looks yummy, and score on warming up the house with delish muffin scent in the morning. :)
