Organic coconut flour is a gluten free alternative to all purpose flour. I was able to review coconut flour and found out just how easy it is to substitute in recipes.
Tropical Traditions! ( I love this company and their products!)
Tropical Traditions is a great resource for anything-coconut and more! The company began with a husband and wife duo that had their family’s health in mind. This mindset didn’t change when they started selling to others. They still have a strong commitment to family farming and organic standards. They are dedicated to using traditional practices to produced healthy coconut oil instead of machines like most large companies. It is made by hand and benefiting families in the rural areas of the Philippines where the coconuts grow.
Tropical Traditions organic coconut flour is fiber from the coconut meat after most of the oil has been extracted to make Virgin Coconut Oil. It is certified organic, unsweetened, and has not been treated with sulfites. Tropical Traditions organic coconut flour is high in dietary fiber and protein, and is gluten-free. It has more fiber than gluten-based grains. Tropical Traditions organic coconut flour can be added to standard wheat-based recipes to add extra fiber, by substituting 10-30% of the grain-based flour with our coconut flour. Some recipes, such as muffins and quick breads, can be accomplished with 100% Tropical Traditions organic coconut flour and therefore be 100% gluten-free! (See my recipes below.) Since organic coconut flour contains natural sugar from the coconut meat, baked goods need less sugar added. The organic coconut flour has a mildly sweet coconut taste!
Tropical Traditions organic coconut flour also contains over 19% non-gluten protein! Therefore, it makes an excellent addition to shakes and smoothies where fiber and protein are needed. (Who would have thought, in a smoothie? I can’t wait to try!) You can also dissolve a spoonful in water as a high-fiber drink with a coconut flavor! This organic coconut flour is very versatile and very tasty. Sprinkle it over your favorite dishes to add a wonderful coconut flavor, use it as a thickener in soups and sauces – the possibilities are endless!
I made these choc-chip cookies that are gluten free and dairy free!
Serving: one dozen small cookies
Preparation Time: 10 minutes
- 1/2 cup Virgin Coconut Oil, melted
- 1/2 cup granulated sugar
- 1/2 tablespoon vanilla extract
- 4 eggs
- 1/8 teaspoon salt
- 1 cup coconut flour
- 1/2 cup shredded coconut
- 3/4 cup chocolate chips
Preheat oven to 375 degrees F.
Mix together coconut oil, sugar, vanilla, eggs, and salt together. Blend thoroughly. Add flour, coconut and chocolate chips; mix thoroughly.
Form into small cookies on a parchment lined pan and bake in preheated oven for about 15 minutes, or until lightly browned.
*This was my first time ever cooking gluten and dairy free on purpose! The cookies were moist and delicious. The recipe was fast and easy. I loved the coconut flakes with the chocolate chips. Very good!*
