I love Southwestern cooking! In the summer time we grow our own tomatoes and peppers for some spicy and delicious meals. When we can’t have fresh, we opt for vegetables in the can from the grocery store, like Del Monte® canned tomatoes and chilies. Because, did you know, Del Monte canned tomatoes, fruits and vegetables contain the same essential nutrients as fresh varieties?

We used the new Del Monte Southwestern-Style Petite Cut® Diced Tomatoes to spicy up and flavor one of our favorite Super Bowl recipes, Mini Stuffed Peppers.

Mini Stuffed Peppers Recipe

Ingredients:

• 1lb  ground beef or Italian sausage
• 1 cup caramelized onions
• 1 Jalapeno
• 2 tsp. Cumin
• 1 tsp. Garlic Powder
• 1 tsp. Tumeric
• 1 can drained Del Monte Southwestern-Style Petite Cut® Diced Tomatoes
• 1 cup Mexican blend cheese
• Salt and Pepper to taste
• 20 mini peppers

Easy Instructions:

Cook beef or italian sausage, drain oil. Caramelize onions. Dice jalapeno and onion. Mix all seasonings and ingredients together in same pan. Cook until blended. Cut the tops off of the mini peppers and throw out seeds.  Neatly stuff mixed ingredients into mini peppers. Cook 25 minutes at 350. Top with cheese blend and cook for an additional 10 minutes.

Just ask my husband, this is one of my favorite dishes to make. It is so easy, healthy and takes no time at all! The ingredients are fresh and delicious. Using the Del Monte Southwestern-Style Petite Cut® Diced Tomato varieties makes it even quicker, not to mention contain the same essential nutrients! This dish is great for appetizers, snacks, or even the main dish with side of rice and beans.
