Tropical Traditions!
Tropical Traditions is a great resource for anything-coconut! The company began with a husband and wife duo that had their family’s health in mind. This mindset didn’t change when they started selling to others. They still have a strong commitment to family farming and organic standards. They are dedicated to traditional practices to produced healthy coconut oil instead of machines like most large companies. It is made by hand and benefiting families in the rural areas of the Philippines where the coconuts grow.
I have been lucky enough to try their virgin coconut oil and now their coconut chips! This is what I made:
Coconut Chips Recipe:
Crust
* 2 cups all-purpose flour
* 2 cups quick-cooking rolled oats
* 1 1/2 cups firmly packed brown sugar
* 1 teaspoon baking soda
* 1/2 teaspoon salt
* 1 1/4 cups butter, softened
Filling
* 1 cup of caramel ice cream topping
* 3 tablespoons all-purpose flour
* 1 cup semi-sweet chocolate chips
* 1 cup of Tropical Traditions coconut chips
* 1/2 cup chopped walnuts
Heat oven to 350°F. Grease 13 x 9-inch pan. In large bowl, blend all crust ingredients at low speed until crumbly. Press half of crumb mixture, about 3 cups, in bottom of greased pan. Reserve remaining crumb mixture for topping.
Bake at 350°F. for 10 minutes. Meanwhile, in small bowl, combine caramel topping and 3 tablespoons flour. Remove partially baked crust from oven; sprinkle with chocolate chips, coconut chips and nuts. Drizzle evenly with caramel mixture; sprinkle with reserved crumb mixture.
Bake at 350°F. for an additional 18 to 22 minutes or until golden brown. Cool completely. Refrigerate 1 to 2 hours until filling is set. Cut into bars.

Coconut Chips:
Coconut Chips are 100% natural and made from organic dried coconuts from the Philippines. They are grown with no fertilizers or pesticides. The coconut chips are not sweetened, and I loved eating them by the handful. Because they were just real coconut with no added sugar I didn’t get a tummy ache that I sometimes do from sweetened coconut. Also, unlike most dried coconut on the market, Tropical Tradition’s dried coconut is not treated with sulfites to keep them white. (I had no idea this happened!) Coconut chips are a great addition to recipes and baking, or like I just mentioned, by the handful for a snack… I suggest adding them to some dried fruits and nuts for a homemade trail mix!
