I am really fond of recipes that just KISS (keep it simple, stupid). If they get to complicated, I often get bored and stop adding necessary ingredients, or give up because I can’t find the right ingredients in my pantry. (I’ve never even heard of that ingredient!) I don’t want to go to the store for a third time to get something I am missing! So… let’s KISS!
It’s simple! This is a basic fried rice recipe (is still a delicious fried rice recipe) that you can add various ingredients to, if desired!
Easiest Fried Rice Recipe
Even quicker than that other fried rice recipe you’ve pinned!
Ingredients
3 cups cooked white rice (day old works great!)
1/4 cup chopped green onions
3 tablespoon olive oil (I used butter flavored olive oil from STAR)
2 eggs, slightly beaten
2-3 tablespoons soy sauce
1/2 cup shredded carrots (or frozen)
salt and pepper to taste
Optional: 1 small onion, 1/2 cup frozen peas, 1 garlic clove, mincedInstructions
Cook rice as directed on packaging. Day old rice works great with fried rice too! My Tips: For the white rice, I used Butter Flavored Olive Oil to keep from sticking. I also substituted low sodium chicken broth instead of water. Both of these things give it more flavor! I cooked it in the rice cooker! Ta-da!Pour olive oil in a large sized skillet. Heat skillet to a medium-high heat. Add carrots and optional items, if desired. Cook until tender. Push the mixture to one side, using the spatula. Add more oil if necessary. Pour eggs into empty side and scramble them, lightly salt &pepper to taste.
Mix together and pour in separate bowl.
Add olive oil if necessary. Add rice to the skillet, and heat for a few minutes. Stir in soy sauce. Add the bowl carrot/eggs to the skillet. Mix thoroughly. Add green onion to the top of the fried rice and serve hot!
Other Tips: This basic fried rice recipe is delicious as is – or you can spruce it up! You can get really creative with fried rice. Use 2 tablespoons of sesame seed oil and add it with the olive oil. Add the optional items. Or what about chicken and diced ham?
YUM. A recipe that is well deserving of praise. And it gets lots of it!
I served this fried rice with some simple chicken. Just cook chicken in teriyaki sauce and season with sesame seeds. Did I mention this meal took 15 minutes?
