I usually have chicken on hand and I am always trying to find new, delicious ways to prepare it. Cooking Light gave me the inspiration for this super simple dish! I made it twice in two weeks for company and everyone’s loved it! It’s especially great for all you mushroom lovers!
Ingredients
4 chicken breast halves
Cooking spray
1/4 teaspoon salt
1/4 teaspoon ground black pepper
7 ounces shiitake mushrooms, sliced ( I usually don’t buy these since they are a little on the pricy side but the flavor is definitely worth it!)
1/2 cup marsala wine
2 green onions, finely chopped
2 tablespoons butter
Preparation
Pound each chicken breast half to 1/2 inch thickness.
Heat a large skillet over medium-high heat. Coat with cooking spray. Sprinkle chicken with salt and pepper. Add chicken to pan. Cook 5-6 minutes on each side. Remove chicken and drippings from pan, set aside.
Using the same pan over medium-high heat, coat with cooking spray and add mushrooms. Cook 2 minutes or until tender, stirring frequently. Add wine and onions. Cook 30 seconds over high heat. Reduce heat, add butter, stirring until butter melts.
Add chicken and drippings to pan, stirring gently.
* I served this over rice but pasta would be great too. Add a simple green salad and you’ll have a quick and easy dinner that’s sure to please!
