Going on a low carb diet can be tough especially if you’re a fan of bread (and who isn’t). I have to admit that while low carbing, I often crave a big ole sandwich but tend to find solace in a lower carb wrap. I’ll tell you what, these delicious tortillas aren’t just for low carb dieters but also for anyone looking for a solid source of fiber, low fat, high protein (5g) and not a drop of hydrogenated oils! Oh, did I mention they’re only 6g net carbs? That’ll work!
While these helped make a workday ham and cheese wrap a reality, I was really excited to give them a try on my weekend breakfast burritos!! A staple in my house, we’ve often forgone the tortillas because of the unnecessary carbs. Not any longer! These tortillas will become a regular in our household!
Here’s how to make Breakfast Burritos with Low Carb Tortillas:
- 6-8 Eggs. Beaten. Add a splash of milk or cream too!
- 1/2 lb Bacon.
- 1/2 White or Yellow Onion, chopped.
- 1 Green/Red Bell Pepper, chopped.
- 2-4 Cloves of Garlic, diced.
- 2 Cups Shredded Cheese
- Salsa or Hot Sauce
- La Tortilla Factory Low Carb Tortillas
- Fry up the bacon. Set aside. Keep bacon grease in pan.
- Sauté onion and bell pepper.
- Once onion and bell pepper are soft and tender add diced garlic.
- Once garlic becomes fragrant, add in eggs and scramble.
- While scrambling eggs, chop bacon.
- Add bacon to scramble. Mix in well.
- Fill La Tortilla Factory Low Carb Tortillas with scramble mixture, top with cheese and hot sauce or salsa.
- Fill your belly!
