Chicken Piccata

This is the best chicken recipe I’ve made for a really long time. It’s not too hard to make and definitely ‘fancy’ enough for company. The fresh lemon and capers are what really make it. Serve on a bed of rice with a simple side salad for a great meal!
Chicken Piccata
1/2 cup all purpose flour
8 thin, boneless chicken breast cutlets (4 oz each)
4 tbsp vegetable oil
1 shallot, minced
1 garlic clove, minced
1 cup low-sodium chicken broth
1/2 large lemon, sliced into 1/4 in. thick half moons and ends discarded
1/4 cup fresh lemon juice (from 1 1/2 lemons)
2 tbsp capers, rinsed
3 tbsp unsalted butter, cut into 3 pieces and chilled
2 tbsp minced fresh parsley
1. Adjust an oven rack to the middle position and heat oven to 200 degrees. Spread the flour in a shallow dish.
2. Pat the culets dry with paper towels, then season with salt and pepper. Dredge through the flour to coat and shake off any excess.
3. Heat 2 tbsp of the oil in a 12 inch skillet over medium-high heat until just smoking. Add half of the cutlets and cook until light golden brown on both sides, about 4 minutes. Transfer to a place and keep warm in the oven. Repeat with the remaining oil and cutlets.
4. Add the shallot and garlic to the oil left in the skillet and cook over medium heat until softened, about 2 minutes. Stir in the broth and lemon slices, scraping up any browned bits, and simmer until reduced and slightly syrupy, about 8 minutes.
5. Stir in the lemon juice, capers, and any accumulated chicken juice. Turn the heat to low and whisk in the butter, one piece at a time. Off the heat, stir in the parsley and season with salt and pepper to taste. Spoon the sauce over the chicken before serving.

My Review: My bathroom has come to life with my new shower curtain! I replaced the old polka-dot shower curtain with the Foliage Shower Curtain from Izola and it looks spectacular in the guest bath room. So far the snow count this season is just 2 days. Usually in Denver we get more by now, but instead we have had lots of cold windy days, which have not been good on my lips.
My lips become chapped and stripped of all moisture from the dry air. I hate having cracked, peeling dehydrated lips – so I avoid this by using Carmex regularly.
More than just the tub or tube, Carmex introduces the Carmex Moisture Plus™ in Clear, Sheer Pink, Sheer Peach! It is a mix of lip balm moisture and light color. These are great instead of using lipstick! The Moisture Plus adds tint and still gives you the Carmex relief you expect.
I am very happy with the soothing moisture it gave my lips. It applied easily with the slant tip design and was instantly hydrating. The tint color in the picture below is the Moisture Plus Sheer Pink. The color gave my lips some spark, but wasn’t too extreme for my taste in color. (I usually am pretty low key with my lip color). For some added moisture, I reapplied another coat 3 hours later. Since my lips were very dry on the first application – the color was more red, like my lips, but on the second application, my lips had soaked in vitamin E and aloe and the color was more light pink. Overall, I like the new Moisture Plus Lip Tint product by Carmex, from the small, sleek tube to the light, natural shades.

The perfect dog bed to fit our dog’s crate.

CSN Review
Our puppy is just over a year, and she still gets lots of compliments on how cute she is… but not her well behaved manner. Definitely not her well behaved manner. She is the sweetest little dog, loves to cuddle when we are around… but when we aren’t it is a competition on how much she can destroy while we are away. We wish we didn’t have to crate her at night, but we do. We have had too many couch pillows ripped to shreds and carpets torn up. We decided since we have to crate her during the night, we want her to be as comfortable as possible. So we looked into getting bedding for our dog crate.
We browsed a few different options at CSN Stores. First, we found the West Paw Design Nature Nap Dog Bed. It has a 4.2 review rating and you can customize it by size and fabric! The price is $28.95 and that is for the smallest size (the mini – 14’’x19’’) I loved that next to the fabric drop down menu you can look at the swatches available. The oatmeal bowl fabric (It is show in the picture as well) was my favorite. So cute! We got out the measuring tape to measure the crate and found out her bed was 36’’x23’’. In the size chart, the closet to those measurements was the Large Bed (22’’x35’’) and added another $20 to the price, making it $48.95. We were looking for a price closer to $30 and wanted the right size of the crate.
So we moved on, no big deal, (there are literally hundreds of dog beds to choose from!) We looked at about five other beds before we found the perfect bed for our puppy. The Search Now Tool Bar allowed us to put in the size dimensions of the bed and it pulled a collection of beds that met our exact needs! This made it easy to find the Ultra Plush Tufted Crate Mat. This bed was the right size and within the price we were looking for.
When it arrived (in just a few days!) we put it in her crate and she immediately sniffed it and laid down! If I was to speak on behalf of her, I think she’d say it is soft and luxurious… oh and machine washable!

Delicious! Duncan Hines Decadent Cakes and Glazes

Duncan Hines launched a Decadent cake line and Decadent Glazes – which I got to taste test!! Lucky me!!
There are two packages inside, the cake mix and the chocolate chunk fudge mix. Check out the chunks!
Pouring the triple chocolate cake mix into the cupcake pan, rich & smooth. One box makes 14-16 cupcakes.
I filled each cup about 2/3 full, then put a small scoop of the chunky fudge on top. Baked in the oven for 21 minutes at 350 degrees, until I could insert a toothpick and it came out clean.
Isn’t waiting for freshly baked dessert to cool the worst part? It really takes a lot of patience to not glaze!!
The Vanilla Decadent glaze went on easy and was a fun way to decorate the cupcakes. I was trying to be fancy with the decorating, and failed. I thought the white vanilla would go well with the deep dark chocolate.
The cupcakes were fantastic! Triple chocolate with real chocolate chunks and rich fudge… heavenly. Perfectly moist and gooey inside, and they contain zero grams of trans fat and NO hydrogenated oils! Duncan Hines has come up with a premium delicious amazing mouth-watering easily-devoured dessert.

Packing lunches might seem like a hassle sometimes, but in the end it is worth it. It’s the healthier option and it is the cheaper option. (If you eat out every day, spending about $7 a day, you can save around $700 a year, by packing your lunch just TWO times per week!) I am smart and frugal, I am a lunch packer.
When packing lunches in our house we use both Ziploc plastic containers and Ziploc bags. We love the containers for left overs; soups and anything that might squish in our lunch totes! We use the baggies for everything else; crackers, carrots, sandwiches. Our plastic container drawer is packed with Ziploc containers big and small. We love the Smart Snap Seal and Twist ‘n Loc containers for saving food for another day! As for saving food for another week or even months, we trust Ziploc to securely seal and store our food in the freezer. Ziploc’s double zipper freezer bag can lock out freezer burn and they are durable enough for a bag full of fruit, vegetables, meat… all types of leftovers! I am thinking pounds and pounds of various Thanksgiving leftovers?!?
