Farmers Market Tips

Throughout summer, many towns and communities host regular Farmers Markets. Here are some tips to make your experience worthwhile:

1. Bring your own bag- I like the ones from RuMe but you can pick them up pretty much anywhere, including your local grocery store. Why use a thin, flimsy bag when you can have something much more sturdy (and cute!).

2. Go early- Beat the crowd and pick from the best selection. Grab that pick-me-up espresso, your honey or a good pal, and make it a date!

3. Know what’s in season- Foods are at their best when they’re fresh. To help you figure out what’s ripe in your state, check out this website. It lets you search by state and month.

4. Bring Cash- Some vendors might be able to run a credit or debit card but save yourself the hassle (and possible fee) by bringing small bills for a quick and smooth transaction.

5. Plan ahead- I love to find recipes that call for fresh produce and spices. Jot down a list of things you might need or be brave and try something new. Don’t be afraid to ask a vendor the best way to cook something or for their suggestions.

Have fun! Farmers Markets have a lot to offer and if you haven’t gone before, try it out!

Coupons for Troops

Fourth of July is coming up this weekend, so I thought this would be a great time to share a neat program with you: Coupons for Troops. The program provides expired and non-expired coupons to military families stationed overseas. Coupons can make a big difference since prices in overseas commissaries are significantly higher than those in the States. Families in overseas bases do not always have access to coupons in newspapers and inserts,  you might be the only way they can receive coupons!

Some of the rules: Military commissaries overseas accept coupons up to six months past the expiration date! Wow! But it is important to send coupons no later than 2-3 months expired, so they have a chance to ship and get to the families for use! So don’t throw those expired coupons out! Military Commissaries accept manufacturer coupons as well as internet printed coupons. The Commissary is a grocery store and some of the most needed and requested coupons are for diapers, toiletries, laundry soap and other household items. All overseas military families have FPO or APO addresses so mailing coupons costs the same as if you were sending them stateside.

If you would like to start sending coupons please visit THIS SITE or THIS SITE and you will be provided addresses of families… that’s rewarding clippin’!

Lemony Orzo Veggie Salad with Chicken

Now that summer is here, I find myself avoiding the oven and trying to find fresh, tasty recipes for those warm and breezy evenings. I was flipping through my Cooking Light magazine and came across the recipe below. It turned out great and by the time we were through with dinner last night my husband was asking if I would make it again soon. It was simple, colorful and full of flavor!

Ingredients:

3/4 cup uncooked orzo

1/4 teaspoon grated lemon rind

3 tablespoons fresh lemon juice

1 tablespoon extra-virgin olive oil

1/2 teaspoon kosher salt

1/2 teaspoon minced garlic

1/4 teaspoon honey

1/8 teaspoon freshly ground black pepper

1 cup shredded skinless, boneless rotisserie chicken breast

1/2 cup diced English cucumber

1/2 cup prechopped red bell pepper

1/3 cup thinly sliced green onions

1 tablespoon chopped fresh dill ( I used a few dashes of dry dill)

1/2 cup crumbled goat cheese

1. Cook orzo according to package directions, omitting salt and fat. Drain and rinse with cold water; drain and place in a large bowl.

2. while orzo cooks, combine lemon rind and next 6 ingredients (through black pepper), stirring well with a whisk. Drizzle juice mixture over orzo; toss to coat. Add chicken and next 4 ingredients (through dill); toss gently to combine. Sprinkle with cheese.

Yield: 4 servings

My lasik surgery TODAY.. yikes!

I am not brave in ANY way-shape-or-form! I do not have a good pain tolerance. In fact,  no pain tolerance at all. Heck, I whine for hours when I stub my toe! So why in the world would I want to be awake and have my cornea cut by a blade and a pulsing computer-controlled laser vaporize a portion of my mid-section cornea called the stroma? …

Because I absolutely hate wearing contacts and hate wearing glasses even more. I’ve been wearing a combination of contacts/glasses for about 8 years now… and I can’t stand it anymore!! I hate how flying drys my eyes out and how contacts stick to my eye. I hate refilling my silly 3 oz. bottle of solution when I fly because of regulations on liquids. I hate when contacts get that little rip in them and your eye is itchy and irritated all day long. I hate buying contact solution. I hate going to the eye doctor yearly, just to have him tell me my eyes keep getting worse. I hate when I forget my contacts or glasses when driving and feel like I am going to run somebody over on the sidewalk (warning: scary driver without vision!) I hate how glasses leave an indent on my nose bridge. I hate how glasses keep getting eaten by my dog. (true story). Whew… sorry I needed to vent my dislikes because I am still trying to convince myself to be brave and not pass out looking at the picture.

So, I have been toying with the idea of Lasik eye surgery for about 3 years now. I had to wait for the right time, because they don’t suggest getting it done before age 25 (eyes still growing). I have done loads of research on procedures, surgery centers and talked to many people with first hand experience. I feel like I am as educated as I can get. Next I made some consultation appointments. I had two in one day… my eyes were dilated for over 6 HOURS! Talk about being a scary driver… I was wearing two pairs of sunglasses as I drove from one office to the other!! My pupils were HUGE!! I wish it was as simple as the consultations.. but no, then you have to actually make an appointment.

I wrote down pros and cons about the different centers. Do I want surgery where John Elway had it done or the Avalanche Hockey team?  Medical assistants that  wear dresses with high heels or medical scrubs? Surgeries only scheduled once a month or a center that can get me in the next day? Seriously these places were night and day. I needed some time to think.

2 weeks later: I decided to call the office I had the better feeling about and ask them if there was any negotiation in the price that I was quoted. The lady was super nice and said she would pull my file and call me back.  She called me back and offered a discount of $200 off my quoted price!! I have NEVER negotiated ANYTHING and was thrilled that I asked! I guess it really never hurts to ask! Now there was nothing stopping me… I got the right place and now I got the right price. So, here I am with an appointment today… nervous, anxious, excited and…. more nervous!! Please pray for my surgery to go well!

Free Wi-Fi coming to Starbucks!!

It was announced on June 14, 2010 – Starbucks is now going to offer Wi-Fi at all company-operated Starbucks stores in the US. Starting July 1, 2010 you’ll be able to enjoy free, one-click, unlimited Wi-Fi!

What does it  mean?

  • Free – no Starbucks Card required (FINALLY!)
  • One-Click – no username or password needed
  • Unlimited – no 2-hour restriction (like before) !!!

Personally, this is a huge deal for me.  I love Starbucks, but whenever I went to use my card to access the internet I felt it was a hassle and just not worth it. You had to have a card – no exceptions! AND there was a time limit… so just forget it!  But after July 1 – it will be available to all! This is so beneficial for those that like to relax and surf while sipping their cup of joe!

Starbucks also announced that  free Wi-Fi is just a start. Howard Schultz announced a new digital experience we’ll be launching at Starbucks stores across the country later this fall – I am a little unsure what this will entail but I hope more great to go along with the free Wi-Fi!! I am so glad Starbucks finally realized it was time to offer free Wi-fi, after all, the little guys are doing it!
